We've discussed this in the past, but matchmaking takes various factors into account, including the strength of your strongest team, your rank, and the ratio of your attacks to your defenses in that week.

The attack:defense ratio thing is the main thing that will get you attacks, but if other people are attacking way more than you around your rank, then they'll get matchmade as opponents in place of you, so you can still go a while without getting attacked. Events throw things out of whack because of the sheer volume of matches some people will do the moment reset occurs, and so people who've done even more matches around your rank are prioritized as opponents ahead of you. Even then, it only prioritizes getting you onto a list; if people aren't clearing their whole lists, they may get you as an opponent in their Attack tab, but are still not attacking you (lots of people discussing doing lots of their matches through Revenge right now, for example).

One man's obsession is another man's hobby. One of the great things about free to play games is you'll have an even wider slice of demographics, and some people absolutely will go above and beyond the normal "limits" of an event. We added these stretch goals to reward players who, even before we had them, would already go above and beyond. We didn't even have an event running last week and Tman joined the 10k club (despite major game downtime, too), which no doubt took many hundreds more matches than the 300 we have for the main prize in this event.

If individual people were doing that every week, sure, then I'd consider if there's a way we'd want to change how we handle it, but most people seem pretty good about pacing themselves in the Arena, and hopefully the release of Gauntlet will give people another avenue to mix things up when it arrives.
