I was wondering if there a list somewhere of all the characters that have been available in the game. Then we can see what we might be missing.

This site is a useful way to keep track of who you have, and who you are still missing. While it's currently a few months out of date, it's still one of the best ways to quickly visualise your collection of older characters. This isn't too much of a problem, as it isn't difficult to keep track of all the new characters released each month, and by the time they become available again, the site will hopefully be updated to remind you about them. It's the site I use myself, and only requires a free account to save your character information.
